Concrete vs oak: what the vessel changes

A simple guide to oxygen, texture and flavor without turning cellar vessels into a quality ranking.

A vessel is part of a larger decision

Concrete and oak both allow many variations. Size, age, shape, porosity and time all matter, so the material alone cannot tell you how a finished wine will taste.

Concrete does not contribute oak-derived aromas, but coated and uncoated concrete can still influence oxygen transfer, pH, colour and sensory development. Oak can allow gradual oxygen exchange and, when newer, add recognizable aromatic and structural elements.

Taste the integration

The useful question is whether élevage supports the wine's fruit, texture and sense of place. A vessel should be read as one tool within the producer's larger intention.
